One of my all time favorite healthy snack, breakfast items and dessert has to got be Greek yogurt, fruit with my homemade granola. It’s one of the few signature recipes that I actually brag about. I love giving it away in mason jars as gifts.
There are unlimited stir-ins and spices you can use to create your own version, like adding raisins or other dried fruit like coconut flakes.
Combine 2 cups rolled oats, 1 and 1/2 cups of nuts (I love sliced almonds or chopped pecans), 1/3 cup warmed coconut oil (or cooking oil of your choice), 1/3 cup honey (or maple syrup or agave or sweetener of your choice), 1/2 teaspoon of salt, 1 teaspoon of vanilla extract, 1/4 teaspoon of cinnamon or other spices you prefer, 1-2 tablespoons flax seeds or pumpkin seeds (optional). I’ve used cinnamon, ground ginger, ground nutmeg and pumpkin pie spice.
Mix very well in large bowl being sure oats and nuts are evenly coated. Line cookie sheet with parchment paper and lay out the granola evenly.
Bake at 350 degrees for about 15 minutes, when it starts to turn brown, flip and cook until desired color. I really like to roast mine to a deep golden brown but that’s a personal preference.
Remove from oven and lightly pat down the granola with a spatula so granola will clump up as it cools. Cool completely. Break apart pieces of the granola and carefully.
Use parchment paper as funnel to slide granola into storage container.
Enjoy on yogurt, add to oatmeal for extra crunch or as is in a bowl with some almond milk.
