Power Energy Oat Bites

Friends of ours brought a batch of these up to (upta if you’re from Maine) our camp in Maine a few weeks ago. As the cover came off the lid to the Gladware container I proclaimed, “Yay, you made energy balls.” I have seen these a lot lately featured in fitness blogs, on Pinterest and magazines and have been dying to try them out. Part of me wishes I never took my first bite because now I’m hooked, and by hooked I mean I think I have made a batch almost everyday since we returned from our trip. Not only are they super easy to make but they are delicious and somewhat nutritious as they contain nuts, peanut butter and ground flax seed.
The ground flax seed acts like the binder and can be found in the natural health section of your grocery store. I’m not calling these energy balls a health food by any stretch, but they are a better alternative to some other choices for a sugar fix.
They are “carb infested” as my husband Drew says but that’s what energy snacks are supposed to have, right? Carbs! I hashtag #carbsaretasty all the time on Instagram because they are and I’m not afraid to shout it out.
These take minutes to make, and make about 14 two-bite sized balls. They would probably keep in the refrigerator or freezer for a very long time as there isn’t anything that perishable in them and they are all naturally preserved by honey and peanut butter. Most of the ones I have made were given away to friends and I featured them on Homemade this week and sold them by the dozen.
Meli’s Power Energy Oat Bites
1 c. rolled oats (If you use gluten free oats, this recipe could be considered gluten free.)
1/3 c. honey
1/2 c. ground flax seed
1/2 c. crunchy or smooth natural peanut butter (I used salted)
1/4 c. unsweetened coconut
1/2 c. semi-sweet mini chocolate chips
1/4 c. chopped pecans
Mix all ingredients together and shape into 2″ balls. Refrigerate in airtight container until set.
Try not to eat them all in one sitting. Enjoy!
